Red Pepper Hummus Recipe

This easy-to-make hummus with garden-fresh ingredients makes a great party dip or appetizer to any meal.

Cook your own garbanzo beans (chickpeas) and freeze them for hummus all year long!


• 15 ounces cooked chickpeas

• 1 sweet red pepper, chopped

• 3-4 cloves garlic, smashed

• Juice of 1 lemon

• 1/3 cup tahini

• 1/4 cup cilantro

• 1/2 teaspoon sea salt

• 2-3 tablespoons water


1. Combine all ingredients except water in a food processor and whiz. Add water through the chute as it processes. If it’s too thick, add a little more water or lemon juice to loosen. Taste, and adjust seasonings and liquid if necessary.

2. To serve, drizzle with a little extra virgin olive oil and garnish with some minced cilantro. Serve with crudites and toasted pita bread or crisps.
