This spectacular radiccio, or chicory, is known in English as ‘Candy Stick Endive.’ In Italy, it is known as ‘Rossa di treviso tardiva.’ It is a wonderful addition to salads and soups, with a crispy yet fresh astringency. Romans love endives and chicory and almost every meal has them in some dish.
