Olives (Olea europaea) are the mainstay of all Italian cuisine. The diversity of olives in Italy is amazing. Not only are they preserved as the savory pickled/salted fruits that we know, they are also the invisible ingredient in most Roman cuisine, so heavily do Romans rely on their oil for cooking.
